Hey, funny people! Today, I have a delicious recipe to share with you guys – Chicken Yakitori Don. It’s a classic Japanese dish that’s sure to satisfy your cravings.

First up, the Yakitori

For this part, you’re gonna need skewers. If you can’t find them in stores, use chopsticks to make skewers. These ones can be prepared in advance and grilled when you’re ready.

Chicken Yakitori Don

Ingredients:

  • 500g chicken thigh fillet, cut into 2cm cubes
  • 1 small onion, cut into 2cm cubes
  • 16 bamboo skewers or chopsticks

For Yakitori sauce:

  • 1/4 cup (60ml) soy sauce
  • 1/4 cup (60ml) mirin (Japanese sweet cooking rice wine)
  • 1 tablespoon sugar
  • 1/2 teaspoon grated ginger

Instructions:

  1. Soak skewers/chopsticks in cold water for 30 minutes. Preheat grill (or grill pan) on medium-high heat.
  2. Thread chicken and onion onto skewers/chopsticks.
  3. Place skewers/chopsticks on the grill and cook for 3-4 minutes. Brush with sauce and turn the skewers/chopsticks, then brush again with sauce. Continue cooking until chicken and onion are cooked through and lightly charred. It takes about 10 minutes in total.
  4. Enjoy your homemade Yakitori!

Next up, the Donburi (rice bowl)

Now that we have the Yakitori, let’s make the Donburi (rice bowl) part. You will love it, trust me.

Ingredients:

  • Long-grain rice (1 cup)
  • Dashi stock (1 cup)
  • Sake (2 tbsp)
  • Mirin (2 tbsp)
  • Soy sauce (2 tbsp)
  • Sugar (1 tbsp)
  • Chicken Yakitori
  • Scallions (2 medium), chopped
  • Cooked bamboo shoots, sliced (optional)
  • Green peas (optional)

Instructions:

  1. Rinse rice in a strainer under cold running water until the water runs clear. Drain well.
  2. Add rice and dashi to a medium saucepan, and let it soak for 30 minutes.
  3. Combine sake, mirin, soy sauce, and sugar in a small saucepan. Place it over medium-high heat and bring it to a boil.
  4. Add the chicken yakitori to the sauce and toss gently. Turn off the heat after a few seconds.
  5. Turn heat up high on the pot with the rice and dashi. Bring it to a boil.
  6. Reduce heat to low and cook for 12-15 minutes or until the liquid has been absorbed.
  7. Remove the pot from heat and let it sit for 10 minutes.
  8. Divide rice among four bowls.
  9. Top each with chicken yakitori mixture, scallions, and your other favorite toppings.
  10. Grab your chopsticks and enjoy!
