- 2 cups of rice
- 1-2 cups of dashi stock
- 1 carrot, sliced
- 2 shiitake mushrooms, sliced
- 1/4 cup of soy sauce
- 2 tablespoons of mirin
- 1 tablespoon of sake

- 1 teaspoon grated ginger
- 1 teaspoon sugar
- 1 clove of garlic
Instructions
- Wash the rice properly and then soak it for about 30 minutes.
- Preheat a pot and remove the rice from the water before placing it in the pot.
- Add all the ingredients to the pot and mix thoroughly.
- Heat the pot over medium-high heat until the ingredients come to a boil.
- Then reduce the heat to low heat and put a lid on the pot.
- Cook the rice over low heat for about 20 minutes until it is fully cooked.

- 3 cups of rice
- 3 1/4 cups of dashi stock
- 2 tablespoons of light soy sauce
- 1 tablespoon of sake
- 1 tablespoon of mirin
- 1 teaspoon of salt
- 10g of dried shiitake mushrooms
- 1 small leek
- 1/2 stick of a carrot
- 50g of bamboo shoots
- 50g of boiled ginkgo nuts
- 4-5 pieces of dried sliced Matsutake mushrooms
Instructions
- Wash the rice thoroughly and then soak it in water for approximately 2 hours.
- Soak the dried shiitake mushrooms in water too.
- After washing, cut the carrots and bamboo shoots into small pieces.
- Cut the leek to a length of about 4cm and then into thin strips.
- After boiling the ginkgo nuts, remove the shells and the inner thin skin.
- After removing the shells of the Matsutake mushrooms, wash them and then cut them into thin strips.
- Heat the dashi stock in the pot, add the soaked mushrooms, and remove them as soon as the dashi stock comes to a boil.
- Add all the ingredients, including the washed rice, to the pot and stir the mixture well.
- Start cooking the rice and the ingredients over high heat, then reduce the heat to low heat and cover the pot with a lid.
- Cook for 15-20 minutes, or until the rice is fully cooked.
- After turning off the heat, let it sit for approximately 10 minutes, then mix the ingredients and the rice together.
- Serve hot!
