Strawberry Shortcake is one of my all-time favorite desserts! It’s perfect for any occasion and never fails to satisfy my sweet tooth. Today, I’ll be sharing my recipe for this classic American treat with a twist of Asian influence. I hope you enjoy it!
Strawberry Shortcake Rolls
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, cold and cut into cubes
- 1/3 cup buttermilk
- 1/2 teaspoon vanilla extract
- 1 egg
- 1/2 cup fresh strawberries, mashed
- 1/4 cup sugar
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
Instructions:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Add butter and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture is crumbly.
- In a separate bowl, whisk together buttermilk, vanilla extract, and egg. Add the wet ingredients to the dry ingredients and mix until just combined.
- Turn the dough out onto a lightly floured surface and knead a few times. Roll the dough out into a rectangle, about 1/4-inch thick.
- Mix mashed strawberries and sugar together in a bowl. Spread the mixture over the dough, leaving a half-inch border around the edge.
- Roll the dough up tightly, starting from the short end. Cut the roll into 8-10 equal slices and place on the prepared baking sheet.
- Bake for 18-20 minutes, or until the rolls are golden brown and a toothpick inserted into the center comes out clean.
- In a separate bowl, beat heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.
- Serve the rolls warm with a dollop of whipped cream on top.
Little Debbie Shortcake Rolls
