Instructions:

  1. Preheat your oven to 170 degrees Celsius.
  2. Separate the egg whites from the yolks and place them in separate bowls.
  3. In the bowl with egg yolks, add in 40 grams of sugar and whisk until the mixture turns pale yellow.
  4. Melt your butter over low heat and add in the milk and salt. Bring to a boil and turn off the heat, then add in the green tea powder and stir until combined.
  5. Add the flour to the egg yolk mixture and whisk until you get a smooth texture. Then add in the green tea mixture and continue whisking until you get an evenly-colored batter.
  6. In the other bowl, whisk the egg whites until it forms stiff peaks. Then gradually add in the remaining 20 grams of sugar and continue whisking until you get a thick, glossy meringue.
  7. Gently fold in a third of the meringue into the egg yolk batter until no white streaks remain, then add in the rest of the meringue and fold until everything is well-combined.
  8. Pour the batter into a well-greased and floured baking tray and bake for 15-20 mins. The cake should be golden brown and springy to touch.
  9. Remove from the oven and let it cool down for a few minutes before carefully peeling off the baking paper. Then let it cool completely before adding in the cherry blossoms.
  10. Roll up the cake gently with the help of a towel or another piece of paper and voila – your Kiyoka Sakura Roll Cake is ready to serve!
