  • Daikon (radish)
  • Konnyaku (devil’s tongue jelly)
  • Boiled eggs
  • Kamaboko (fish cake)
  • Chikuwa (tube-shaped fish cake)
  • Atsuage (deep-fried tofu)
  • Kombu (dried kelp)
  • Dashi broth (Japanese soup stock)
  • Soy sauce
  • Mirin (sweet rice wine)
  • Sake

Now let’s get cookin’!

Step 1: Peel and cut the daikon into thick rounds.

Step 2: Cut the konnyaku into bite-sized pieces.

Step 3: Cut the boiled eggs in half and take out the yolks. Smash the yolks in a bowl and mix with a little bit of soy sauce to make a paste.

Step 4: Cut the kamaboko and chikuwa into slices.

Step 5: Cut the atsuage into bite-sized pieces and lightly fry them in a pan. This will help to remove excess oil.

Step 6: Soak the kombu in water for about 30 minutes to make the dashi broth. Put the water and kombu in a pot and heat over low heat. Remove the kombu just before the water starts boiling.

Step 7: Add the konnyaku, daikon, kamaboko, chikuwa, and atsuage to the pot with the dashi broth. Simmer over medium heat for around 30 minutes.

Time to add some flavor!

Step 8: Add the soy sauce, mirin, and sake into the pot. Stir gently.

And now, the finishing touch…

Step 9: Add the egg yolk paste on top of the Oden. This will give it a nice creamy texture.
