Have you ever tried Middle Eastern cuisine before? If not, you’re missing out on some amazing flavors and dishes! Let me introduce you to one of my favorites, Mujadara! This traditional Middle Eastern dish is made with lentils, rice, and caramelized onions. It’s simple yet satisfying and perfect for a comforting meal.

Ingredients:

  • 1 cup brown or green lentils
  • 1 cup basmati rice
  • 2-3 onions, thinly sliced
  • 3-4 tablespoons olive oil
  • 2 teaspoons cumin
  • Salt and pepper to taste

Instructions:

  1. In a pot, add lentils and cover with 2-3 cups of water. Bring to a boil, then reduce heat and let simmer for 20-30 minutes or until the lentils are soft. Drain and set aside.
  2. In a separate pot, add rice and cover with 2 cups of water. Bring to a boil, then reduce heat and let simmer for 15-20 minutes or until the rice is cooked. Fluff with a fork and set aside.
  3. While the lentils and rice are cooking, heat 2 tablespoons of olive oil in a pan over medium heat. Add the thinly sliced onions and cook, stirring occasionally until they are caramelized and browned, about 20 minutes. Remove from heat.
  4. In the same pan, heat the remaining olive oil and add cumin. Cook for about 30 seconds, stirring constantly, until fragrant.
  5. Add the cooked lentils and rice to the pan with the cumin and stir until well combined.
  6. Serve hot with the caramelized onions on top and enjoy!

This dish is perfect as a side dish or as a main dish. It’s vegan, gluten-free, and packed with protein and fiber. The lentils provide a nutty flavor and a slightly firm texture, while the rice adds a subtle sweetness.
