Ingredients

  • 8 oz udon noodles

  • 2 cups dashi broth
  • 1 tsp soy sauce
  • 1 tsp sake
  • 1 tsp mirin
  • 1 tsp sugar
  • 1 tsp salt
  • 1/4 tsp ginger, grated

Instructions

  1. Boil the udon noodles according to the package instructions and set them aside.
  2. Cut the abura-age tofu into thin strips and set them aside.
  3. Mix the dashi broth, soy sauce, sake, mirin, sugar, salt, and ginger in a pot. Bring it to a boil, then simmer for 5 minutes.
