Japanese Fruit Mochi Strawberry Ichigo “Kubota” Daifuku Sweet Rice Cake
First up, we have this mouth-watering Japanese sweet rice cake – the “Kubota” Daifuku Sweet Rice Cake. It’s soft, chewy, and oh-so-satisfying. Here are the ingredients you’ll need:
- 1 cup sweet rice flour
- 2 tablespoons sugar
- 1/2 cup water
- cornstarch for dusting
- Fresh strawberries
- Anko (sweet red bean paste)
Now let’s get started with the instructions:
- In a mixing bowl, combine the sweet rice flour, sugar, and water. Mix until well combined.
- Cover the bowl with plastic wrap and microwave for 2 minutes.
- Remove the bowl from the microwave and stir the mixture with a spatula.
- Cover the bowl again and microwave for an additional 1 minute.
- Dust your work surface with cornstarch and transfer the mixture onto it.
- Knead the mixture until it becomes smooth and shiny. Divide into small pieces, about 20 grams each.
- Press each piece into a flat circle. Place a small amount of anko and one strawberry in the center and wrap the dough around it, pinching the edges to seal well.
- Dust the mochi with cornstarch and serve immediately.
Doesn’t that look absolutely delicious?! I can already imagine sinking my teeth into that soft, chewy mochi texture and tasting the sweetness of the anko and juicy strawberries. Perfect for a strawberry-themed party or any day when you want a little extra sweetness in your life.

Next up, we have a lovely and oh-so-Instagrammable dessert that I just can’t get enough of: Pink Strawberry Food. Here are the ingredients you’ll need:
- 1 cup heavy cream
- 4 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1 pound strawberries, sliced
- 1/2 cup granulated sugar
- 1/4 cup water
- 1/4 cup cornstarch
- 1/4 cup cold water
And here are the steps for putting it all together:
- In a mixing bowl, beat the heavy cream until stiff peaks form. Set aside.
- In another mixing bowl, beat the cream cheese until smooth. Add the powdered sugar and vanilla extract and beat until well combined.
- Slowly add the whipped cream to the cream cheese mixture and gently fold until combined.
- Divide the mixture into small ramekins or serving dishes and refrigerate for at least 2 hours.
- In a saucepan, combine the sliced strawberries, granulated sugar, and water. Bring the mixture to a boil and reduce the heat to low. Simmer until the strawberries are softened, about 10-15 minutes.
- In a small bowl, mix the cornstarch and cold water until well combined. Add the mixture to the strawberry mixture and bring to a boil, stirring constantly until thickened.
- Serve the strawberry compote over the chilled cream mixture and garnish with fresh strawberries, if desired.
