Pesto Pasta
Ingredients
- 1 pound pasta (any shape you like)
- 2 cups fresh basil leaves, packed
- 1/2 cup freshly grated Parmesan-Reggiano cheese
- 1/2 cup extra-virgin olive oil
- 1/3 cup pine nuts
- 3 garlic cloves, coarsely chopped
- Salt and freshly ground black pepper, to taste
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook for 8-10 minutes, or until al dente. Drain and set aside.
- While the pasta is cooking, make the pesto sauce. In a food processor, combine the basil, Parmesan cheese, pine nuts, and garlic. Pulse until coarsely chopped.
- With the machine running, slowly pour in the olive oil and process until the mixture is smooth.
- Season with salt and pepper to taste.
- In a large bowl, combine the cooked pasta and the pesto sauce. Toss to coat the pasta evenly with the sauce.

Pesto Chicken Pasta
Ingredients
- 1 pound chicken breast
- 1 pound pasta (any shape you like)
- 2 cups fresh basil leaves, packed

- 1/2 cup extra-virgin olive oil
- 1/3 cup pine nuts
- 3 garlic cloves, coarsely chopped
- Salt and freshly ground black pepper, to taste
