Ingredients

  • 1 pound pasta (any shape you like)
  • 2 cups fresh basil leaves, packed
  • 1/2 cup freshly grated Parmesan-Reggiano cheese
  • 1/2 cup extra-virgin olive oil
  • 1/3 cup pine nuts
  • 3 garlic cloves, coarsely chopped
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook for 8-10 minutes, or until al dente. Drain and set aside.
  2. While the pasta is cooking, make the pesto sauce. In a food processor, combine the basil, Parmesan cheese, pine nuts, and garlic. Pulse until coarsely chopped.
  3. With the machine running, slowly pour in the olive oil and process until the mixture is smooth.
  4. Season with salt and pepper to taste.
  5. In a large bowl, combine the cooked pasta and the pesto sauce. Toss to coat the pasta evenly with the sauce.
  6. Serve hot and enjoy!

  • 1 pound pasta (any shape you like)

  • 1/2 cup extra-virgin olive oil
  • 1/3 cup pine nuts
  • 3 garlic cloves, coarsely chopped
  • Salt and freshly ground black pepper, to taste

Instructions

  2. While the pasta is cooking, heat a non-stick skillet over medium-high heat. Add the chicken and cook for 5 minutes on each side or until browned and cooked through. Remove from skillet and set aside.
  3. While the chicken is cooking, make the pesto sauce. In a food processor, combine the basil, Parmesan cheese, pine nuts, and garlic. Pulse until coarsely chopped.
  4. With the machine running, slowly pour in the olive oil and process until the mixture is smooth.
  5. Slice the cooked chicken breast into thin pieces and add to the skillet. Pour the pesto sauce over the chicken and stir to combine.
  6. In a large bowl, combine the cooked pasta and the chicken with pesto sauce. Toss to coat the pasta evenly with the sauce.
