Ingredients
Here’s what you’ll need:
- 3 eggs
- 3/4 cup flour
- 3/4 cup white sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/4 cup hot water
- 1/2 cup jelly of your choice
- Powdered sugar (optional)
Instructions
Preheat your oven to 375 degrees F and grease a jelly roll pan (10×15 inches).
In a large mixing bowl, beat the eggs until they are thick and lemon colored.
Gradually add the sugar, and continue beating until the mixture is light and fluffy.
Sift together the flour, baking powder, and salt.
Add the sifted dry ingredients to the egg mixture; mix well.
Add the hot water and vanilla; mix well.
Pour the mixture into the prepared jelly roll pan and spread it out evenly.
Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.
Remove the cake from the oven and immediately turn it out onto a towel sprinkled with powdered sugar.
Peel off the waxed paper and roll the cake up with the towel.
Let it cool in the rolled-up position.
Once the cake has cooled, unroll it carefully.
Assembly
Now for the fun part! Let’s fill this delicious cake with some jelly.
Spread the jelly evenly over the cake, but leave about 1/2 inch around the edges.
Roll the cake back up, starting at a short end, using the towel to help you.
