Instructions:

  1. Heat the oil in a large saucepan or wok over medium heat. Add the curry paste and cook for 1-2 minutes, until fragrant.
  2. Add the coconut milk, stock, fish sauce, sugar, lemongrass, galangal, and kaffir lime leaves. Stir to combine and bring to a simmer.
