Classic Fish and Chips
For the fish:
- 2 lbs. fresh cod or haddock
- 1 cup all-purpose flour
- 1 tsp. salt
- 1 tsp. baking powder
- 1 cup beer (lager or ale)
For the chips:
- 4 large potatoes, cut into wedges
- 2 tbsp. vegetable oil
- 1 tsp. salt
Instructions:
- Preheat oven to 425°F. Line a baking sheet with parchment paper and set aside.
- Cut the potatoes into wedges and toss them with vegetable oil and salt. Spread them onto the prepared baking sheet and bake for about 25-30 minutes, until golden brown and crispy.
- In a large bowl, whisk together the flour, salt, and baking powder. Gradually pour in the beer and whisk until smooth.
- Dredge the fish in the batter until completely coated and fry in hot oil until golden brown and crispy. Drain on paper towels.
- Serve the fish with the fries and tartar sauce on the side.
Baked Haddock with Brown Butter Lemon Sauce
For the fish:
- 4 haddock fillets
- 2 tbsp. olive oil
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. paprika
For the sauce:
- 4 tbsp. unsalted butter
- 1 tbsp. lemon juice
- 1/4 cup chopped parsley
- 1/4 tsp. salt
Instructions:
- Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
- Rinse the haddock fillets and pat dry with paper towels. Drizzle them with olive oil and sprinkle with salt, pepper, and paprika.
- Bake the fish for about 15-20 minutes, until cooked through and flaky.
- Meanwhile, melt the butter in a small saucepan over medium heat. Cook until it turns golden brown and gives off a nutty aroma. Remove from heat and add the lemon juice, parsley, and salt.
- Spoon the brown butter sauce over the haddock fillets and serve immediately.
