Instructions:

Wash the rice until the water runs clear. Drain the water and let the rice sit for 30 minutes. Then, add 2 cups of water to the rice and cook in a rice cooker. In a small saucepan, mix 2 tablespoons of sugar, 2 tablespoons of rice vinegar, and 1 teaspoon of salt. Heat the mixture on low heat until the sugar has dissolved. Once the rice is cooked, transfer it to a large bowl.

Gradually pour the vinegar mixture over the rice while using a spatula or rice paddle to mix. As you mix, fan the rice to cool it down, which will give it a glossy finish. Cover the bowl with a damp towel and let it sit until it cools down completely.

Preparing the Toppings:

Cut the salmon and avocado into small cubes.

Assembling the Chirashi Sushi:

Place the cucumber slices at the bottom of a mixing bowl, then add the prepared sushi rice on top of the cucumber. Sprinkle sesame seeds over the rice, then add the salmon and avocado cubes on top.
