As I sat down to write this article, I couldn’t help but think of all the wonderful dishes my grandmother would prepare for us every Sunday. Growing up in a family of food lovers, we were always looking for new recipes to try out. Recently, we came across two mouth-watering Chicken Tikka Masala recipes online that we couldn’t resist trying out.

The first recipe we tried was from Guras Spice House. The title of the recipe was simply “Chicken Tikka Masala,” but the dish turned out to be anything but simple. We started off by marinating the chicken overnight in a combination of spices, yoghurt, and lemon juice. The next day, we grilled the chicken until it was cooked through, and set it aside. In a separate pan, we sautéed onions, garlic, and ginger until they were golden brown. We added in a few more spices (cumin, coriander, turmeric, garam masala) and a can of tomato sauce to create the base for the sauce. We let the sauce simmer on low heat for a while, until it thickened up.

Once the sauce was ready, we added in the grilled chicken and let it cook for a few more minutes. To finish off the dish, we added in a dollop of cream, and garnished it with fresh cilantro. The end result was a creamy, flavourful Chicken Tikka Masala that we all loved. We served it with a side of basmati rice and naan bread.

The second recipe we tried was from Hotnchili, an Indian restaurant. Their Chicken Tikka Masala recipe was a bit different, but equally delicious. We started off by marinating the chicken in yoghurt, lemon juice, and a few spices (cumin, coriander, paprika, turmeric). We then grilled the chicken and set it aside. In a separate pan, we sautéed onions, garlic, and ginger until they were translucent. We added in a can of crushed tomatoes, more spices (garam masala, fenugreek leaves), and a few spoonfuls of honey to create the base for the sauce. We let the sauce simmer on low heat for a while, until it thickened up.

Once the sauce was ready, we added in the grilled chicken and let it cook for a few more minutes. To finish off the dish, we added in a few tablespoons of cream and garnished it with fresh cilantro. The end result was a slightly sweet, slightly spicy Chicken Tikka Masala that we all enjoyed. We served it with a side of basmati rice and garlic naan bread.

Overall, both recipes were winners in our books. They were easy to prepare, and the result was a delicious, flavourful dish that satisfied all our taste buds.
