Hello fam, y’all know I love making some bomb Mexican food in my kitchen. Today, I stumbled upon some bomb enchilada recipes that are too good not to share with my squad. Let’s get started!

Vegetable Enchiladas

  • 1 tablespoon of oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of chili powder

  • 1/4 teaspoon of cumin
  • 1/4 teaspoon of oregano
  • 1 can of black beans, drained and rinsed
