Today, we wanted to share one of our favorite dishes with you all. This dish is perfect for summer, so refreshing and full of flavor. We are talking about the one and only ceviche! We have found not one, but two amazing recipes for this dish, so let’s get started!

Ceviche Recipe #1

First up is a recipe we found on one of our favorite cooking blogs. This ceviche is made with shrimp and has just the right amount of spice. Here’s what you’ll need:

Ingredients:

  • 1 pound of shrimp, peeled and deveined
  • 1/2 cup of fresh lime juice
  • 1/2 cup of orange juice
  • 1/2 cup of diced red onion
  • 1 jalapeno pepper, seeded and minced
  • 1/4 cup of chopped fresh cilantro
  • 2 garlic cloves, minced
  • 1 teaspoon of salt
  • Tortilla chips, for serving

Instructions:

  1. First, bring a large pot of salted water to a boil. Add the shrimp and cook for 2-3 minutes, or until they turn pink and are cooked through. Drain the shrimp and run them under cold water to stop the cooking process.
  2. Next, place the cooked shrimp in a large bowl and add the lime juice, orange juice, red onion, jalapeno pepper, cilantro, garlic, and salt. Stir everything together until well combined.
  3. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 6 hours, to allow the flavors to meld together.
  4. When you’re ready to serve, divide the ceviche among 4-6 bowls and serve with tortilla chips on the side.

Ceviche Recipe #2

Our second recipe is a classic Peruvian-style ceviche that we found on Pinterest. This recipe uses fresh fish, lime juice, and lots of delicious seasonings. Here’s what you’ll need:

Ingredients:

  • 1 pound of fresh fish, cut into small pieces
  • 1/2 cup of fresh lime juice
  • 1/2 red onion, thinly sliced
  • 1 jalapeno pepper, sliced
  • 1/4 cup of chopped fresh cilantro
  • 3 garlic cloves, minced
  • 1 tablespoon of minced ginger
  • 1 teaspoon of sea salt
  • 1/4 teaspoon of black pepper
  • 1 sweet potato, boiled and sliced into rounds
  • 1 ear of corn, boiled and sliced

Instructions:

  1. Place the fish in a large bowl and add the lime juice, red onion, jalapeno pepper, cilantro, garlic, ginger, salt, and black pepper. Stir everything together until the fish is well coated.
  2. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 4 hours.
  3. When you’re ready to serve, arrange the sweet potato and corn on a large platter. Spoon the ceviche over the top and serve immediately.
