Castella Sponge Cake Recipe

  3. Place the bowl over a pan of simmering water, making sure the bottom of the bowl does not touch the water. Continue whisking the mixture until it reaches 110°F (43°C).
  4. Remove the bowl from the heat and continue whisking the mixture until it triples in volume and becomes thick and pale in color. This should take about 10-15 minutes.
  5. Sift the cake flour into the egg mixture and fold it together gently using a spatula until there are no more lumps.
  6. Pour the batter into the prepared pan and tap the pan gently on the counter a few times to remove any air bubbles.
  7. Bake the cake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove the cake from the oven and let it cool completely on a wire rack.
  9. Once the cake is cool, slice and enjoy!
