Matcha Soft Serve with Shiratama and Azuki Sauce
Indulge in our creamy and rich Matcha Soft Serve, made with the finest matcha powder. This delightful treat is then topped with soft and chewy Shiratama, which are traditional Japanese dumplings made from mochi rice flour. And to top it off, we drizzle Azuki Sauce over the entire dessert, which is made from sweet red bean paste.
Ingredients:
- 1 cup heavy cream
- 1 cup whole milk
- 1/2 cup granulated sugar
- 1/8 tsp salt
- 2 tbsp matcha powder
- 1/2 cup Shiratama mochi rice flour
- 1/2 cup water
- 1/2 cup Azuki Sauce (can be purchased at most Asian grocery stores)
Directions:
- In a medium saucepan, mix together heavy cream, whole milk, granulated sugar, salt, and matcha powder.
- Cook over medium heat, stirring constantly, until sugar is dissolved and mixture is hot.
- Remove from heat and allow to cool to room temperature.
- In a separate bowl, mix together Shiratama mochi rice flour and water until a sticky dough forms.
- Roll the dough into small balls and boil in a pot of water until they float to the surface.
- Remove Shiratama from water and allow to cool.
- Serve Matcha Soft Serve in a cup or bowl of your choice.
- Top with Shiratama and drizzle with Azuki Sauce.
Matcha Azuki Roll Cake
For a more traditional dessert, try our Matcha Azuki Roll Cake. This light and fluffy sponge cake is filled with silky smooth matcha cream and sweet azuki red bean paste.
Ingredients:
- 4 eggs (room temperature)
- 1/2 cup granulated sugar
- 1/2 cup cake flour
- 1 tbsp matcha powder
- 1/2 cup heavy cream
- 2 tbsp granulated sugar
- 1 tbsp matcha powder
- 1/2 cup Azuki red bean paste
Directions:
- Preheat your oven to 350°F.
- In a medium bowl, whisk together eggs and granulated sugar until pale and fluffy.
- Add cake flour and matcha powder and whisk until fully combined.
- Line a jelly roll pan with parchment paper, and pour the batter into the pan. Spread batter out to all edges and smooth until even.
- Bake for 10-12 minutes until the cake is lightly browned and springs back when touched.
- Remove the cake from the oven and let it cool for a few minutes before flipping onto a clean kitchen towel. Remove the parchment paper and roll the cake up in the towel to cool completely.
- For the matcha cream filling, whip together heavy cream, sugar, and matcha powder until stiff peaks form.
- Once the cake is cool, unroll it carefully and spread the whipped matcha cream filling over the entire cake.
- Take the azuki red bean paste and spread a thin layer over the matcha cream filling.
- Carefully roll the cake back up and let it chill for at least 30 minutes to set.
- Dust with powdered sugar and serve.
