Organic Amazake Recipe

For this recipe, you will need:

  • 1 cup of brown rice
  • 1 cup of water
  • 1/4 cup of koji
  • 1/4 cup of raisins
  • 1 cinnamon stick
  • 1 teaspoon of vanilla extract
  • Dash of sea salt

Instructions

Step 1: Soak the brown rice and raisins in water overnight. Drain the excess water and transfer the mixture to a high-speed blender.

Step 2: Add the cinnamon stick, vanilla extract, and sea salt to the blender. Blend on high speed until the mixture is smooth and creamy.

Step 3: Transfer the mixture to a pot and add the koji. Mix well and place the pot on the stove over low heat. Stir frequently to avoid sticking.

Step 4: Heat the mixture until it reaches 140°F and hold it at this temperature for 8 hours. Alternatively, you can place the mixture in a slow cooker and heat it on low for 8 hours.

Step 5: Remove the cinnamon stick and transfer the Amazake to a glass container. Store in the fridge for up to 5 days.

Horaiya Honten Amazake Recipe

For this recipe, you will need:

  • 1 cup of cooked white rice
  • 2 cups of water
  • 1/4 cup of koji
  • 1/4 cup of sugar
  • 1/4 teaspoon of salt

Instructions

Step 1: Mix the cooked white rice with water in a pot. Bring to a boil and then reduce the heat to low. Cover the pot and simmer for 20 minutes.

Step 2: Remove the pot from heat and let it cool until the temperature reaches around 110°F.

Step 3: Add the koji to the cooled rice and mix well.

Step 4: Transfer the mixture to a jar and cover with a towel secured with a rubber band. Keep the jar in a warm place (around 122°F) for 8-10 hours.

Step 5: Once the mixture has fermented, transfer it to a pot and heat it over low heat. Add the sugar and salt and mix well.

Step 6: Stir frequently until the mixture reaches 140°F. Continue heating for another 20 minutes, then remove from heat and let it cool down.

Step 7: Refrigerate the Amazake for at least 2 hours before serving.
