Are you looking for a flavorful and healthy vegetable side dish? Look no further than Aloo Gobi! This traditional Indian dish features a hearty mix of potatoes and cauliflower, seasoned with a blend of fragrant spices. With this simple recipe, you can bring the authentic flavors of India right to your dinner table.

To start, preheat your oven to 375°F. Wash and peel 2 large potatoes, then chop them into bite-sized pieces. Cut 1 medium head of cauliflower into florets. In a large bowl, combine the potatoes and cauliflower with 2 tablespoons of olive oil, 1 teaspoon of cumin, 1 teaspoon of coriander, 1/2 teaspoon of turmeric, 1/2 teaspoon of salt, and a pinch of cayenne pepper. Toss to coat the vegetables evenly.

Spread the vegetables out on a baking sheet in a single layer. Roast for 30-35 minutes, or until golden brown and tender. Be sure to stir the vegetables every 10-15 minutes to ensure even cooking.

While the vegetables are roasting, prepare the spice blend. In a small bowl, combine 1 tablespoon of ground cumin, 1 tablespoon of ground coriander, 1/2 teaspoon of turmeric, and 1/2 teaspoon of cayenne pepper. This blend will add depth of flavor to your Aloo Gobi.

Once the vegetables are finished roasting, set them aside. In a large skillet, heat 3 tablespoons of ghee (or butter) over medium-high heat. Add 1 finely chopped onion and cook until soft and lightly browned, about 5-7 minutes. Add 2 finely chopped garlic cloves and cook for an additional minute.

Add the spice blend to the skillet and stir to coat the onion and garlic. Cook for 1-2 minutes to allow the spices to bloom and become fragrant. Next, add the roasted vegetables to the skillet and stir to coat them evenly with the spiced onion mixture. Cook for 5-10 minutes, or until the vegetables are heated through.

Garnish your Aloo Gobi with fresh chopped cilantro or parsley, then serve alongside your favorite main dish. This aromatic and filling side dish is perfect for vegetarians and meat-lovers alike. Try serving it with a traditional Indian curry for a complete and satisfying meal.

Enjoy this delicious Aloo Gobi recipe as a side dish or a main course. With its unique blend of spices and hearty vegetables, it’s sure to become a staple in your kitchen.
